Paris, by the author, 1904. In-12, xxi, 494 p., paperback. First printing of the first edition and copy with large margins. Illustrated with a portrait of the author, who was the director of the pastry and confectionery courses of the professional school of hotel masters, and of E. Darenne who signs the preface. Darenne who signs the preface. There are 10 pages of drawings and some illustrated advertisements at the end.Protected in crystal paper, all defects are minor. (Bitting, 186). Attached: - PARMENTIER (Antoine Augustin). Instruction on syrups and preserves of grapes, intended to replace sugar in the main uses of domestic economy. Paris, Méquignon aîné, 1809. In-8, xv, 310 p., [3] f., red half calf, spine gilt, gilt title, candle paper cover preserved. Second edition, partly original. This memoir responds to a wish of Napoleon to substitute cane sugar, whose importation was made difficult by the blockade, in the main domestic uses. Parmentier's memoir was largely inspired by the research undertaken by Joseph Louis Proust (1754-1826) on the extraction of sugar from grapes, but beet was finally chosen. Provenance: copy of the library of the gastronomic bibliophile Jean-Pierre Dol, his name stamped in gilt on the bottom of the spine. Wide light spotting and other minor defects. In-8, xxxii, 866 p., [2] f. inserted (catalog), 3 pl., red half-chagrin, spine decorated. 9th edition of the Memorial containing 3000 recipes of pastries, ice creams and liqueurs, illustrated with some engravings, portraits and 3 plates of folded facsimile letters. This edition was given after Lacam's death by his son-in-law Paul Seurre and contains a subscription report for the erection of a bust in the author's honor. Small bite to cloth, corners dulled, small tears to folds of boards without missing, some foxing. (Sale Pierre Lacam, 112; Oberlé, Fastes, 243 for the above edition).
