First edition illustrated with 25 plates printed in chromolithography and 161 vignettes on wood drawn after nature by E. Ronjat. Oberlé claims that complete copies of the 25 plates in color as here are rare because in many cases they contain only 4 of them while the others are in black. In any case, this is true of the 3rd and 4th editions which have a reduced number of color plates. "This culinary work is, with those of Urbain Dubois, one of the most complete and serious treatises that exist; the recipes that one finds there are very sought after, but one must have a rather large budget, allocated to table expenses, to be able to follow the learned advice of this master of the culinary art", says Vicaire.
