275. FAVRE (Joseph). Universal dictionary of practical cooking, illustrated encyclopedia of food hygiene. Modification of man by food. Paris, L'auteur, s.d. [ca. 1903]. 4 vol. in-4. Binding of the time in half red chagrin, spine with false rings.
Second corrected and enlarged edition, published by the author's widow shortly after his death. Favre was actively working on this edition when death took him prematurely, at the age of 54. The dictionary includes: Etymology, synonymy in three languages, history, chemical analysis of all natural and compound foods, hygienic properties appropriate to ages and sexes, vegetarian, Greek, Assyrian, Roman, French, English, German cuisine, biographies of all illustrious cooks and culinary terminology. In all, more than 6,000 recipes, 2,000 figures in the text and 4 color plates.
It is the largest culinary encyclopedia ever made, says Gérard Oberlé. "Favre knew how to surround himself with the most competent collaborators in culinary science; he refers to the most famous authors: Barthélémy, Darenne, Escoffier, Gilbert, Lacam, Lombard, Ozanne, Petit, etc."

In-8, posterior brown half-basin, spine with false-nerve titles. [2] f., frontispiece, iii, 788 p. (text on 2 columns) 10 plates hors-texte, vignettes in the text. First edition of this remarkable culinary encyclopedia, the most important one before Favre's and complete with its 11 plates, a beautiful frontispiece, a plate on tableware and 9 plates on the placement of services at table. Important article on truffles.

Publisher's decorated cardboard, slipcases. Very complete and documented dictionary, elaborated by the members of the Academy of Gastronomes.
Cases rubbed, small cracks.
Provenance: the chef Bernard Noby, of the Corneille Hotel in Bagnères-de-Luchon, attested by his wet stamp on the title page.
